Life has been totally CRAZY this month. We’ve been eating a lot of stir fry. And a lot of cereal. And maybe a lot of in-n-out burger…I’ll never tell.
If you want to know why my life has been crazy go check out Fit Con Utah! It’s a crazy awesome fitness event we’re putting on THIS WEEKEND! I can’t believe it’s here. I am so excited for it! I’m also really excited to get back to the blog next week. Because I have some serious blogging to do.
Back to this stir fry. I think it’s my favorite one yet. (Or this one is good too). I spice up your typical beef broccoli, with, well, spices. And beautiful red peppers. We’ve definitely had this three times in the last two weeks. We’re not complaining though.
- 2 tsp sesame oil
- 2 cloves garlic – minced
- 2 cups broccoli
- 2 cups peppers
- 1 lb steak - cut into strips
- 2 cloves garlic – minced
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp ginger
- 2 tbsp brown sugar
- ¼ cup soy
- 2 tbsp rice wine vinegar
- 2 tsp hoisin
- 2 tsp chili garlic paste
- 1 tsp sriracha
- 1 tsp red pepper flakes
- 1 cup beef broth
- 1 tbsp cornstartch + ¼ cup water
- 2 cups cooked rice or quinoa.
- Toss the sesame oil, garlic, broccoli and peppers in a medium bowl.
- Place the veggie mixture in a hot frying pan and cook about 3-4 minutes, stirring occasionally.
- Place the veggies on a plate and set aside.
- Using the same frying pan, begin to cook the steak pieces.
- While the steak is cooking, in a medium bowl whisk together the garlic, salt, pepper, ginger, brown sugar, soy, rice wine vinegar, hoisin, garlic paste, sriracha, pepper flakes and beef broth.
- Add this to the frying pan with the steak.
- Let simmer for 15-20 minutes.
- In a small bowl, mix the cornstarch and water. Add that to the frying pan.
- Add the veggies back in and stir to coat with sauce.
- Serve over rice or quinoa.
